Simple Aloo Tikki

Hi friends ,
Back with a long awaited post .....Simple Aloo Tikki , it can be used in burger buns, in channa chaat or in the bread slices too.You can make these tikkis for your kids birthday parties as well.Children love to eat these tikkis with tomato ketchup.


Ingredients:

  • 500gm Boiled potatoes 
  • 100 gm boiled peas (optional)
  • Chopped coriander leaves
  • 1/2 tsp red chilly powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • 1 tsp chaat masala or amchoor powder
  • 2-3 chopped green chilies (optional)
  • Salt according to taste
  • Refined oil for frying

Method:

  1. Mash potatoes and peas nicely.
  2. Mix all the dry ingredients (except oil) in potato mixture.
  3. Divide the portion into 6 equal portions,make a ball and then flatten it with your hands.
  4. Heat a non-stick pan on medium flame and pour 1 tbsp of oil on it.
  5. Spread the oil evenly and place all the tikkis in the pan.
  6. Cook the tikkis from both the sides till they are brown in colour,pour some more oil while frying the tikkis.
  7. Drain on absorbent paper and serve hot with green chutney.

Egg Curry

Ingredients:
  • 4 hard boiled eggs (cut into halves)
  • 2 onions
  • 3 large tomatoes (pureed)
  • 4-5 flakes of garlic
  • 1"inch ginger
  • 1/2 tbsp garam masala
  • 1/2 tbsp coriander powder
  • 1/4 tsp red chilly powder
  • 1/2 tsp chicken masala (optional)
  • Salt acc.to taste
  • 2 cloves
  • 1"inch cinnamon stick
  • Chopped coriander leaves
  • Water
  • 2 tbsp oil
Method:
  1. Grind ginger,garlic and onion into fine paste.
  2. Heat oil in kadhai,add cloves and cinnamon stick.
  3. Add onion paste,mix nicely.
  4. Saute till onion paste becomes golden brown in colour.
  5. Add pureed tomatoes and stir continuously.
  6. Cook till oil separates.
  7. Add all the dry masalas (except garam masala).Mix nicely.
  8. Add water to get desire curry thinness.
  9. Bring it to boil and then cook on low flame for 5-6 mins.
  10. Add boiled eggs.
  11. Sprinkle a pinch of garam masala or coriander leaves and serve hot with rotis.

Black Eyed Beans (lobia recipe)

Ingredients:
  • 100 gm black eyed beans (lobia)
  • 2 tomato
  • 1"inch ginger
  • 1 green chilly
  • 2 tbsp oil 
  • 1 tsp cumin seeds
  • A pinch of asafetida (hing)
  • 1 tbsp coriander powder
  • 1/2 tsp garam masala
  • 1/4 tsp red chilly powder
  • 1/2 tsp cumin powder
  • 1/4 tsp dry mango powder (amchoor)
  • 1/4 tsp turmeric powder (haldi)
  • Salt acc.to taste
  • Water
  • Garnish: chopped coriander leaves
Method:
  1. Wash and soak black eyed beans for 3-4 hrs.
  2. Mix salt, turmeric powder, black eyed beans and 1 glass of water in a cooker.Cook on high flame till first whistle.Cook it for another 6-7 mins on low flame.
  3. Grind green chilly, tomato and ginger .
  4. Heat oil in a pan, add cumin seeds and asafetida. When cumin seeds splutter add tomato paste and cook till oil separates.
  5. Add all the dry masalas (coriander powder,dry mango powder,red chilly powder,cumin powder) mix well and cook for 1-2 mins.
  6. Mix this masala in the cooked black eyed beans. Mix nicely. Add water according to the curry consistency.
  7. Cook till it boils and for another 5-6 mins on low flame.
  8. Add garam masala, mix well.
  9. Before serving garnish it with chopped coriander leaves.
  10. Black eyed beans are ready to serve with rice and roti.

Paneer Bhurji (my style)

Ingredients:
  • 200 gm paneer (cottage cheese)
  • 1 onion (sliced)
  • 1 tomato (chopped)
  • 1 capsicum (sliced)
  • 1 tbsp tomato ketchup
  • Salt acc.to taste
  • 1/4 tsp black pepper powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 cup milk
  • Chopped coriander for garnishing
Method:

  1. Heat oil in a kadai, add onions and saute till onion turns pink brown.
  2. Add tomato and all the dry masalas (except garam masala). Mix nicely.
  3. Add ketchup and capsicum, cook till oil separates.
  4. Add crumbled paneer and mix nicely. Cook on low flame for 2-3 mins.
  5. Add milk, stir continuously so that paneer doesn't stick to kadai.
  6. Cook till milk evaporates.
  7. Add garam masala, remove from fire.
  8. Sprinkle chopped coriander leaves.'
  9. Serve hot with parantha or roti.

Mushroom Tikka

This one is for all my vegetarian friends....


Ingredients:
1 pack of Mushroom
1/2 cup thick curd
1 tbsp ginger/garlic paste
1/2 tsp garam masala
1/2 tsp coriander powder
1/2 tsp red chilly powder or acc.to taste
A pinch of red colour (optional)
1/2 lemon juice
1 tbsp besan (roasted channa powder)
1 tbsp cream (optional)
1/2 tsp kasuri methi powder
Salt acc.to taste
1 capsicum
1 tomato
1 onion


Method:
  • Wash and remove mushroom stem,pat dry.
  • Cut large cubes of onion, capsicum and tomato.
  • Mix all the ingredients of marination in a bowl.
  • Dip the mushrooms,capsicum,tomato and onion in the marination and keep it for 2-3 hrs in the refrigerator.
  • Take wooden skewers and skew marinated mushrooms and veggies alternatively one by one.


Note: Keep skewers in water for 1 hr before assembling the veggies and mushrooms. This will prevent skewers to get burnt.
  • Roast in tandoor or grill in microwave at 230c for 10-15 mins.
  • This time I did shallow frying in non-stick pan.

  • Basting in between with butter and oil. (1:1 ratio)
Serve hot with green chutney and onion laccha rings.

Tangri Kebabs

All time favourite kebab in the family....




Ingredients:
4-6 pieces chicken drumsticks
1st Marination
1tbsp lemon juice or vinegar
1 1/2 tbsp ginger/garlic paste
Salt acc.to taste
2nd Marination
1/2 cup thick curd (nestle one or make it at home,hung for 30 mins)
2 tbsp cream (amul one)
2 cubes of cheese (I used Britannia one)
1 egg
A pinch of Cardamon powder
1 tbsp cornflour
1 tbsp of chopped coriander
1 finely chopped green chilly (optional)
A pinch of salt


Method:
  1. Wash and pat dry chicken drumsticks.
  2. Put slits on the drumsticks with the help of a knife.
  3. Marinate drumsticks with the first marination for 1 hr.
  4. Mix all the ingredients of second marination and add drumsticks in the mixture.
  5. Marinate the drumsticks for 3-4 hrs in refrigerator.
  6. Heat gas tandoor for 10 mins and put the drumsticks in the tandoor and cook on medium flame.
  7. Keep turning in between and basting with oil.Cook till tender or chicken becomes brown.
  8. Sprinkle some chaat masala and serve hot with chutney and onion rings.

Note: If you don't have a gas tandoor, you can grill it in microwave (temp 220c ) for 15 -20 mins. Keep checking in between.
You can also cook it in Non-Stick pan. (Shallow fry)

Dhabey Ki Dal

Hello friends ...
  Ready with another post ....this is liked by most of us. You can also call it as       LANGAR WALI DAL ....
Ingredients:
1/4 cup channa dal (bengal gram)
1/4 cup urad dal (split black gram)
1/4 cup rajma (kidney beans)
2 medium size onions (finely chopped)
1 1/2 tbsp ginger/garlic paste
2 tomatoes (grated)
1/2 tsp turmeric powder
1 tsp red chilly powder
1 tsp garam masala
1 tsp cumin power
1 tsp coriander powder
1/2 tsp cumin seeds
a pinch hing
2 tbsp ghee
Little bit of dried fenugreek leaves (kasoori methi)
Salt acc.to taste
Garnish: Chopped dhania (coriander leaves),dollop of butter.


Method:
  1. Wash,clean and soak the dals in sufficient water for 3-4 hrs.
  2. Pressure cook all the dals with turmeric powder and little bit of salt, keep it on high flame till first whistle then on low flame for 20-25 mins. 
  3. Heat ghee in a pan,add cumin seeds and hing. When cumin splutters add onions and ginger-garlic paste,saute till they become golden brown in colour.
  4. Add tomatoes,mix well and cook till ghee separates.
  5. Add all the dry masalas (except kasoori methi).
  6. Add boiled dals. Mix well and simmer on low flame for 5-7 mins.
  7. Add kasoori methi,again mix it.
  8. Remove from fire , sprinkle chopped coriander leaves on top and serve hot.

Serve the dal with missi roti or tandoori roti.......

Stir Fried Vegetables

Low Calorie Recipe for health conscious people.......I made it because I love change in my menu... 




Ingredients:

  • 2 cup veggies (baby corn, broccoli, mushrooms, peas, beans, carrot)
  • Red Bell pepper 
  • Paneer (optional)
  • 1 medium size onion (finely chopped)
  • 1 tbsp ginger garlic paste
  • 2 tbsp tomato ketchup
  • Tabasco sauce 
  • 1 tsp soya sauce
  • 1 tsp vinegar
  • 1 tsp honey
  • Salt acc.to taste
  • 1/2 pepper powder

Method:

  1. Blanch all the veggies (except mushrooms) and keep them aside.
  2. Heat oil in a pan, add ginger garlic paste and onion, mix well.
  3. Saute till onions become transparent.
  4. Add chopped red bell pepper. Saute for 1 minute.
  5. Add salt, pepper, soya sauce, tomato ketchup, vinegar, honey. Mix well.
  6. Cover the lid and cook for 5-6 mins.
  7. Remove from fire.
  8. Serve hot with boiled rice and mashed potatoes.

Palak Mutton

Ingredients:
1/2 kg mutton
3 bunch of spinach (palak)
2 big onions (finely chopped)
3 big tomatoes (pureed)
2 tbsp ginger garlic paste
1 tbsp coriander powder
1 tbsp mutton powder
1/2 tsp red chilly powder
1/2 tsp garam masala
1/4 tsp turmeric powder
Salt acc.to taste
2 cloves
1" cinnamon stick
3-4 whole pepper
1 bay leaf
Ghee 
1/2 cup fresh cream


Method:
  1. Pressure cook mutton with cloves ,cinnamon ,whole pepper and bay leaf.Close the lid and cook on high flame till first whistle ,then keep it for 15-20 mins on low flame.(till mutton is half cooked) Keep it aside.
  2. Clean spinach. Wash it several times in running water. Add 1/2cup of water and bring it to boil.When spinach wilts,remove from fire and keep it aside.Grind into paste when it cools down.
  3. Take ghee in a non stick kadai,add onions and ginger-garlic paste,saute till they become golden brown.
  4. Add tomatoes,saute till ghee separates.
  5. Add all dry masalas and mix well.Add mutton and water(in which mutton was cooked,discard the whole spices) and mix well.Keep it on low flame for 5-10 mins.
  6. Add spinach paste and stir well.
  7. Cook on low flame till spinach and mutton cook well.
  8. Add fresh beaten cream and mix well.Remove from fire.
For Garnish: Heat ghee in tadka pan add 1/4 red chilly powder and pour this tadka on Palak Mutton.
Serve immediately with Naan or Tandoori Roti......

Cold Coffee

Enjoy the cold coffee in this hot summery weather .....


Ingredients:
  • 2 glass of milk 
  • 3 tbsp icing sugar
  • 2 tsp coffee
  • 1 cup crushed ice
Garnish:
  • Chocolate sauce
  • Chocolate powder

Method:
  1. Mix all the ingredients in the blender, except chocolate sauce.
  2. Blend well till smooth.
  3. Pour into individual glasses.Sprinkle chocolate powder on top.
  4. Serve chilled.

Chicken Lollipops

Enjoy the tasty snack with your favorite cocktail or mocktail ..




Ingredients:
6 Chicken lollipops
1 1/4 tbsp Ginger garlic paste
Salt acc.to taste
1 tsp Soya sauce
2 tbsp Besan / 1tbsp of maida or cornstarch
1 egg
1 tsp Kebab Masala
1 tsp Dhania powder
1/2 tsp Garam masla
1/4 tsp Red chilly powder (optional)
1/2 Cumin Powder 
Few chopped mint leaves
Few chopped coriander leaves

Method:
Wash chicken lollipops,keep aside.
Mix all the ingredients and marinate chicken lollipops for 5-6 hrs or overnight.
Deep fry them till brown from all the sides.
Take them out on absorbent paper.
Sprinkle chaat masala and serve hot.

Red Cabbage and Corn Salad

Easy and simple low fat Salad Recipe for you all ......

Ingredients:

  • 1/2 red cabbage 
  • 1/2 cup corn kernels
  • 1/2 cup chopped pineapple
  • 1 cup yogurt dressing (low fat homemade dressing)
  • 1/4 spring onion (optional)
  • 2 tbsp low fat mayonnaise

Method:

  1. Mix all the veggies and keep it in fridge.
  2. Mix mayonnaise and yogurt dressing, keep it in fridge.
  3. Before serving mix veggies and dressing. Toss well 
  4. Serve chilled.
Recipe for yogurt dressing: 
  • 1/2 cup hung curd
  • 1/2 tsp vinegar
  • 1/2 tsp honey
  • 1/2 tsp olive oil
  • Salt according to taste
  • 1/4 tsp pepper powder
  • 1/4 tsp mustard seeds powder/mustard sauce
  • 1/4 tsp chilly flakes (optional) 

Mix all the ingredients and whisk nicely.
You can put this dressing in any salad of your choice.
