Masala Kaju ( Spicy Cashew-nuts)

Hi Friends ,
As Diwali is approaching, we all are busy in shopping, cleaning and decorating our houses. Diwali "festival of lights", we share our happiness in the form of gifts with our friends and relatives. 
Making something nutritious and fresh always double the happiness. So I tried something very common but came out very tasty.




Ingredients:
  • 150 gms whole cashew nuts
  • Salt acc.to taste
  • 1/2 tsp red chili powder
  • 1/4 tsp pepper powder 
  • 1/2 tsp chaat masala
  • 1/2 tsp mint powder* (optional)
  • 3 tbsp ghee for frying

Method:
  • Heat ghee in a  frying pan.
  • Add cashews, fry till light brown.
  • Drain them on an absorbent paper.
  • Sprinkle all other ingredients over the cashew-nuts.
  • Toss till masalas are well coated on cashew-nuts.
  • Store them in an airtight container once they cool down completely to room temperature. 

Note*: (I make mint powder at home by drying mint leaves, then grind them into fine powder. You can use it in raitas too.)

Drying Mint leaves and powdering them is a idea to keep Shruti. I will bear that in mind next time, before throwing away that yellowing bunch of Mint leaves..
