Sabz Pasta (Veggie pasta in red sauce)

Hi Friends,
  Earlier I posted basic tomato sauce which you can use it on pizza base or in pasta . I used same sauce to make pasta but in a healthy way by adding veggies (sabz) into it ..... I gave it to my son in his favorite plate, big smile on his face made me so happy :-) 





Ingredients:
  • 2 cups wheat penne pasta 
  • 1 tbsp oil
  • 2 tsp Salt
  • 1 carrot
  • 4-5 green beans
  • Bell peppers (yellow and red) In-case you don't have bell peppers you can use capsicum too 
  • 1/2 cup corns
  • 1/2 cup peas
  • 1 small Broccoli (I used cauliflower as I didn't have it)
  • 2 tbsp olives
  • 2 tbsp jalapenos

For Tomato Sauce:

  • 3 tbsp olive oil
  • 2 cloves garlic (crushed)
  • 500 gm tomatoes (finely chopped)
  • 1 small onion  (finely chopped)
  • 1 tbsp oregano
  • 1/2 tbsp chilly flakes
  • 1/2 tbsp sugar
  • 1/4 tsp black pepper
  • Salt acc.to taste
  • A pinch of ajinomoto (optional)

Method:

  1. Boil water adding salt and oil. Add pasta and cook till its half done. Discard water and keep the pasta aside.
  2. Chop all the veggies and blanch them in boiling water for 15-20 mins. Drain and keep them aside.
  3. Make tomato sauce. For recipe click here.
  4. Follow till step 4 ....Now add tomato ketchup. Mix well.
  5. Add veggies and mix well.
  6. Add penne pasta and mix nicely but gently.
  7. Cook on low flame for 5-10 mins covered.
  8. Remove from fire.
  9. Garnish with chopped parsley or coriander leaves.

Note: Please don't overcook the pasta. 
         You can use any shape of the pasta (spiral, spaghetti, penne)
