Vegetable Burger

Hi All.....
    Today's post is about vegetable burger which is adored by kids as well as by adults too........Earlier I posted potato cheese cutlets, the same cutlet I used in burger bun for my son. 
For adults at home, I added corn, chopped carrots and peas in the cutlet.

Veggie burger was created in London but now a days its famous worldwide through McDonald's and KFC..............But homemade are always the best :-)

Ingredients:
4 burger buns
Tomato slices
Onion slices
Lettuce leaves (chopped)
4 tbsp tomato ketchup
4 tbsp butter (room temperature)
4 tbsp mayo 

Method:

  • Cut each burger horizontally into two, apply little butter and toast them lightly on tava.

  • Spread tomato ketchup on the lower half of the bun.

  • Place onion slices followed by tomato slices.

  • Place the cutlet on the top, now apply some mayo.


  • Place one cheese slice on the mayo....(I skipped putting cheese slice)
  • Put some lettuce leaves. Spread mayo again.

  • Cover with the remaining half of the bun.
  • Burger is ready to be served ....

  • Enjoy.


For kids: (If they don't like veggies in the burger then follow these two easy steps)

  • Follow first two steps of the method given above ...Place the cutlet and apply mayo on the top.
  • Place cheese slice and cover with the remaining half of the burger.

Egg and Corn Hot Dog

Hi Friends, 
Whenever the name Hot dog comes in your mind we always think of sausages served in the bun, topped with mustard, tomato and mayo.... 

 But its not necessary to have it with sausages, you can make your own varieties of filling for hot dog at home . Veg and non-veg both are made easily at home. Keep experimenting with the fillings of your own choice.

Serve them in Breakfast or as Tea snack. Its a all time favourite snack of kids, you can send them in their snack box too.



Ingredients:
  • 2 hot dog buns
  • 1 hard boiled egg (chopped)
  • 1/2 onion (finely chopped)
  • 5 tbsp butter
  • 1/4 cup milk + 1/4 cup water
  • 1 tbsp all purpose flour (Maida)
  • 1/2 cup corn (frozen or fresh)
  • 1/4 tsp pepper powder
  • 1/2 tsp oregano
  • A pinch of sugar
  • Salt acc.taste
Garnish: Pizza Cheese (Grated)




Method:
  • Heat 2 tbsp of butter in a non-stick pan. Add onion, saute till they become golden pink in colour.

  • Add maida, saute again till maida becomes light brown in colour.

  • Now add milk and water mixture. Keep stirring to avoid lump formation.

  • Add corn and chopped hard boiled egg. Mix well.

  • Add pepper powder, sugar, oregano and salt. Mix nicely.

  • Remove from fire.
  • Make slit on the buns, apply little butter inside the bun.
  • Now stuff each bun with the corn-egg filling.
  • Sprinkle the cheese on the top.

  • Place them in a baking tray and bake them on 180 C temp for 5-6 mins (till cheese melts).
  • Remove from oven, Serve hot.

Note: I used hard boil egg, instead of egg you can use crumbled cottage cheese (Paneer)

Sooji / Semolina Toast / Desi Pizza

Hi Friends,
Today's recipe I learnt around 10 yrs back....Tried it and it became a hit.
I learnt this recipe from a cookery show (don't remember the name), very healthy and crunchy.
Have these sooji toast anytime of the day, in breakfast,  with a cup of tea or send them in your child's lunch box.

 Ingredients:

  • 4-5 brown bread slices
  • 1 cup thick curd 
  • 1 cup semolina / Sooji 
  • Finely chopped veggies (Red, green and yellow bell pepper, tomato without pulp, onion, parsley or fresh coriander leaves)
  • Salt acc.to taste
  • 1/4 tsp pepper powder
  • 1/4 tsp oregano
  • 1 tbsp butter



Method:

  • Heat a pan, slightly dry roast the semolina till the aroma arises.
  • Remove from the pan.
  • Take a bowl, put semolina, veggies, curd, salt, pepper and oregano.

  • Mix well and make thick paste. ( Add water if required)

  • Remove sides of the bread and apply butter on one side of the slice.
  • Apply the veggie mixture on the other side of the slice.
  • Now toast the slices in the non-stick pan.

  • Cook from both the sides till it become golden brown in colour.
  • Apply butter or oil in case paste sticks on the pan.
  • Remove from fire, cut into desired shape.
  • Serve hot with tomato ketchup.

Egg Sandwich

Hi Friends ...
       Egg has high amount of protein which is very good for growing kids. Eggs are not only rich in protein but also rich in Vitamin A, B2, iron and calcium. Egg can be given in many forms like omelette, hard boiled, scrambled eggs, half fried etc etc...
I made egg sandwich today ...Tried for the first  time, so sharing the recipe with you. Try it and get a big smile on your kid's face :-)



Ingredients:

  • 4 slices of bread (I prefer brown bread)
  • 1 hard boiled egg (finely chopped)
  • 1 small onion (finely chopped)
  • 1 green chilly (finely chopped)
  • Few fresh coriander leaves (finely chopped)
  • 3 tbsp fat free mayonnaise
  • 2 tbsp tomato ketchup
  • Salt acc.to taste
  • 1/2 tsp pepper powder

Method:

  1. Mix all the ingredients in a bowl except bread slices and ketchup. Mix it well and keep the filling aside.
  2. Apply ketchup on each slice and spread the filling on the slice.
  3. Place the another slice on the filling.
  4. Now grill the sandwich in the toaster for 5-7 mins or till slices become golden brown in colour.
  5. Serve hot with a glass of a milk.


Note: If you don't want to use eggs, you can add grated carrots, cabbage or paneer (cottage cheese) in the same way.

Amritsari Kulcha

Hi Friends .....
  Yesterday was my B'day and I thought of taking full day rest but one of my cousin asked me -"What esp. you are making today?" .....Those words I took them seriously and made Amritsari Kulcha at home :-)
I tried this for the first time and was liked by everyone at home. So sharing the recipe with you all so that you  too can impress your family members :-)

Ingredients:
3 cups Maida (all purpose flour)
3 tbsp Curd 
1/4 tsp baking soda 
1/2 tsp baking powder
1 tsp Sugar 
Salt  acc. to  taste
Oil for kneading 
For garnishing:
Few chopped coriander leaves
Onion seeds or melon seeds 

For Potato Mixture:
4-5 potatoes (boiled and mashed)
1-2 green chilies (finely chopped)
1 medium size onion (finely chopped)
1 tsp amchoor powder (dry mango powder)
1 tbsp coriander powder 
1/2 tbsp garam masala
Salt acc.to taste
Few coriander leaves 
(finely chopped) 

Method:
  • Sieve the maida in a bowl add  curd, baking soda, baking powder, salt, sugar.
  • Mix the ingredients, knead the flour with water to make a smooth dough.
  • Apply oil to the dough. Cover it with wet towel and keep it at a warm place. Within 4-5 hours the dough will become double the size.
  • Knead it again with greased hands. Keep the dough aside and prepare your potato filling.
For Filling :
Mix all the ingredients nicely in mashed potatoes and keep it aside.

How to make Kulcha:
  • Divide the dough into 5-6 portion and balls of the dough.
  • Take one ball of the dough and roll it into a flat disc of 3 inch.
  • Put the potato mixture on the dough. Close it from all the sides to make a round ball again.
  • Apply dry atta on the ball and press it with light hands to make kulchas.
  • You can use rolling pin too (but with light hands).

  • Garnish with some onion seeds (kalonji) and finely chopped coriander on the top of the kulcha.
  • Place it in tandoor. ( I used electric tandoor)

  • You can make it on griddle or tava too. (Put the kulcha on the tava or griddle and roast it till it turns brown from all the sides).
  • Remove from fire or tandoor.
  • Apply little butter on the top and serve hot with white chole or mix veggie raita.
