Egg Fried Rice


Hi All.......
Chinese food is one of the favourite cuisines now a days ........Fried rice, noodles, chili chicken, chili paneer and momos have become kids favourite..
Made egg fried rice last night with chili chicken. Chili chicken recipe I posted earlier so today posting recipe of EGG FRIED RICE...... 

 Ingredients:

  • 2 cups  rice
  • 4 cups water
  • 2 Eggs
  • 2 cups of finely chopped veggies (Carrot, beans, capsicum, cabbage, spring onion, onion)
  • 1/2 cup chopped Spring onions
  • 1 tbsp finely chopped Garlic
  • 1 tbsp finely chopped Ginger
  • 1/4 tbsp pepper powder
  • Salt acc.to taste
  • 2 tbsp oil
  • 1 tbsp soya sauce
  • 1 tbsp vinegar
  • 1 tbsp chili sauce
  • 2 tbsp tomato ketchup



Method:


  • Cook rice in 4 cups of water in a heavy bottomed pan. Once half-cooked remove from fire.
  • Drain and  spread them on a large plate or a tray.

                          

      • Add a little oil in a pan, beat the eggs, pour them into the  pan. When egg has set a little from one side, stir and scramble it. Remove from fire. Keep them aside.


      •  Heat oil in a non-stick kadhai, add chopped ginger-garlic. Saute for 5 seconds.
      •  Add onions and cook till they become golden pink in colour. Add chopped carrot, beans and fry them for 3-4 mins.
      • Add Cabbage, Spring onions and capsicum and saute for 3-4 mins on high flame.


        

      • Don't overcook the veggies, they should be crisp.
      • Now add vinegar, soya sauce, tomato ketchup and chili sauce. Mix well.
      • Slowly add cooked rice, black pepper powder and salt, mix well with light hands without breaking the rice.
      • Sprinkle scrambled egg at the top. Remove from fire.



      • Serve hot with your favorite gravy...........

      Egg Sandwich

      Hi Friends ...
             Egg has high amount of protein which is very good for growing kids. Eggs are not only rich in protein but also rich in Vitamin A, B2, iron and calcium. Egg can be given in many forms like omelette, hard boiled, scrambled eggs, half fried etc etc...
      I made egg sandwich today ...Tried for the first  time, so sharing the recipe with you. Try it and get a big smile on your kid's face :-)



      Ingredients:

      • 4 slices of bread (I prefer brown bread)
      • 1 hard boiled egg (finely chopped)
      • 1 small onion (finely chopped)
      • 1 green chilly (finely chopped)
      • Few fresh coriander leaves (finely chopped)
      • 3 tbsp fat free mayonnaise
      • 2 tbsp tomato ketchup
      • Salt acc.to taste
      • 1/2 tsp pepper powder

      Method:

      1. Mix all the ingredients in a bowl except bread slices and ketchup. Mix it well and keep the filling aside.
      2. Apply ketchup on each slice and spread the filling on the slice.
      3. Place the another slice on the filling.
      4. Now grill the sandwich in the toaster for 5-7 mins or till slices become golden brown in colour.
      5. Serve hot with a glass of a milk.


      Note: If you don't want to use eggs, you can add grated carrots, cabbage or paneer (cottage cheese) in the same way.

      Egg Biryani


      Hi Friends...
        Sometimes you don't feel like making full meal including dal, roti, raita and rice...Biryani is a great solution to break your same old routine.
      Biryani is the rice item which is cooked with lot of spices and veggies or chicken or egg.
      Its is served with raita or curry dish. Most famous is the Hyderabadi biryani. ..Me love the biryani most so sharing my recipe with you all.



      Ingredients:
      2 cups Basmati rice
      3-4 cloves
      4 green cardamoms
      3 black cardamoms
      1/2″ cinnamon stick
      2 bay leaves
      1/2 tbsp oil
      6 cups of water
      For Masala:
      6 hard boiled eggs, remove the shell and cut into halves
      3 large onions (finely sliced)
      2 tomatoes (finely chopped)
      Few fresh coriander leaves
      Few fresh pudina leaves
      3 tbsp ghee
      2 tbsp oil
      3/4 cup beaten curd
      1 tbsp ginger garlic paste
      1/4 tbsp red chilly powder
      1/2 tbsp garam masala
      1/2 tbsp coriander pwd
      salt acc.to taste
      pinch of saffron soaked in Luke warm milk 
      Biryani Masala : I used SHAH BIRYANI MASALA.

      Method:
      1. Cook rice in 6 cups of water along with bay leaves, cloves, cinnamon, cardamom, elaichi and oil till its half cooked. Strain the water and spread the rice on a large wide plate.  Allow to cool.
      2.  Heat  oil in a vessel, add sliced onions, saute till caramelised (don't burn the onions just dark brown).Remove half of the caramelised onions and keep aside.
      3. Grind mint leaves, coriander leaves and green chilies. Keep it aside.
      4. To the remaining half caramelised onions add ginger garlic paste and saute. 
      5. Add green paste and mix well. Saute for 4-5 mins.
      6. Add red chilly powder, coriander powder,salt, garam masala, biryani masala powder and mix well. 
      7. Add chopped tomatoes and cook till oil separates. 
      8. Add the yogurt and combine. Cook for another 5 mins. 
      9. Remove from fire.
      10. Take a wide deep vessel to prepare the biryani. Add apply some oil all over, add half the rice as a first layer followed by the  masala, place eggs on the masala and spread out in the vessel.
      11. Spread the remaining rice over the egg masala layer, pour 2 tbsp of ghee all over the rice, add the caramelised onions. Garnish coriander leaves and pour the saffron milk over the rice.
      12. Place lid and over the lid place a heavy weight. 
      13. Place the iron tawa on the burner then keep the vessel on top of the tawa and cook biryani for 15 mins on low flame. 
      14. Remove from fire. Don't remove the lid immediately.
      15. Just remove it before serving.
      16. Serve hot with mix vegetable raita.

      Mughlai Parantha

      Hello Friends ....
      On weekends I get time to try new recipes but today's recipe I am making from last 10 yrs....Parantha fill with egg stuffing,very easy and healthy to make.
      I learnt this recipe from my massi :-) I love it, you can try this recipe for your kidos...Pack it in their lunch box or give them as evening snack too...

      Ingredients:
      1 cup wheat flour
      1/2 cup all purpose flour (maida)
      Salt
      Water for kneading
      For filling:
      4 eggs
      1 onion (finely chopped)
      1 tomato (finely chopped) (optional)
      2 green chilies (finely chopped)
      Few fresh coriander leaves (finely chopped)
      Salt acc.to taste
      1/2 tsp black pepper powder


      Method:-
      Mix both the flours and salt. Add water and knead into soft dough.
      Divide it into 8 equal portion and roll out in thin rotis.
      Take a bowl, whisk eggs and mix all other ingredients. Mix them nicely.
      Cook each roti on medium flame.
      Put 4 tbsp of egg mixture on the center of the roti.




      Fold the roti from both the sides.
      Apply thin layer of egg mixture on the top.
      Now cook the parantha from the sides, till egg mixture inside is fully cooked.
      Apply oil on both the sides while cooking the parantha.
      Once the egg inside is fully cooked, remove from the tawa.
      Cut the parantha diagonally and serve hot with tomato ketchup.

      Egg Curry

      Ingredients:
      • 4 hard boiled eggs (cut into halves)
      • 2 onions
      • 3 large tomatoes (pureed)
      • 4-5 flakes of garlic
      • 1"inch ginger
      • 1/2 tbsp garam masala
      • 1/2 tbsp coriander powder
      • 1/4 tsp red chilly powder
      • 1/2 tsp chicken masala (optional)
      • Salt acc.to taste
      • 2 cloves
      • 1"inch cinnamon stick
      • Chopped coriander leaves
      • Water
      • 2 tbsp oil
      Method:
      1. Grind ginger,garlic and onion into fine paste.
      2. Heat oil in kadhai,add cloves and cinnamon stick.
      3. Add onion paste,mix nicely.
      4. Saute till onion paste becomes golden brown in colour.
      5. Add pureed tomatoes and stir continuously.
      6. Cook till oil separates.
      7. Add all the dry masalas (except garam masala).Mix nicely.
      8. Add water to get desire curry thinness.
      9. Bring it to boil and then cook on low flame for 5-6 mins.
      10. Add boiled eggs.
      11. Sprinkle a pinch of garam masala or coriander leaves and serve hot with rotis.
