Egg and Corn Hot Dog

Hi Friends, 
Whenever the name Hot dog comes in your mind we always think of sausages served in the bun, topped with mustard, tomato and mayo.... 

 But its not necessary to have it with sausages, you can make your own varieties of filling for hot dog at home . Veg and non-veg both are made easily at home. Keep experimenting with the fillings of your own choice.

Serve them in Breakfast or as Tea snack. Its a all time favourite snack of kids, you can send them in their snack box too.



Ingredients:
  • 2 hot dog buns
  • 1 hard boiled egg (chopped)
  • 1/2 onion (finely chopped)
  • 5 tbsp butter
  • 1/4 cup milk + 1/4 cup water
  • 1 tbsp all purpose flour (Maida)
  • 1/2 cup corn (frozen or fresh)
  • 1/4 tsp pepper powder
  • 1/2 tsp oregano
  • A pinch of sugar
  • Salt acc.taste
Garnish: Pizza Cheese (Grated)




Method:
  • Heat 2 tbsp of butter in a non-stick pan. Add onion, saute till they become golden pink in colour.

  • Add maida, saute again till maida becomes light brown in colour.

  • Now add milk and water mixture. Keep stirring to avoid lump formation.

  • Add corn and chopped hard boiled egg. Mix well.

  • Add pepper powder, sugar, oregano and salt. Mix nicely.

  • Remove from fire.
  • Make slit on the buns, apply little butter inside the bun.
  • Now stuff each bun with the corn-egg filling.
  • Sprinkle the cheese on the top.

  • Place them in a baking tray and bake them on 180 C temp for 5-6 mins (till cheese melts).
  • Remove from oven, Serve hot.

Note: I used hard boil egg, instead of egg you can use crumbled cottage cheese (Paneer)

Moong Sprouts

Hi Friends ,
Easiest and lightest recipe with minimum calories. Have it in your breakfast or during tea time.

 Ingredients:
1 cup moong sprouts (green gram)
1/2 cup red bell pepper (finely chopped)
1/2 cup yellow bell pepper (finely chopped)
1 medium size onion  (finely chopped)
2 green chillies (finely chopped) In-case you like spicy food
1/2 tbsp olive oil
Salt acc.to taste
1/2 tsp black pepper powder
A pinch of ajinomoto
1/4 tsp sugar
For garnishing : 
3-4 tbsp  Fresh coriander leaves (finely chopped) 
Lemon juice 



Method:
  1. Heat oil in a non-stick pan. Add onion and saute them till gold pink in colour.
  2. Now add yellow and red bell pepper. Saute on high flame for 2-3 mins.
  3. Now add moong sprouts and green chillies (optional) and mix nicely.
  4. Add all the seasoning and ajinomoto.
  5. Cook on medium flame for 6-7 mins. Toss gentle in between.
  6. Remove from fire.
  7. Sprinkle lemon juice and garnish with coriander leaves.
  8. Serve hot.

Sooji / Semolina Toast / Desi Pizza

Hi Friends,
Today's recipe I learnt around 10 yrs back....Tried it and it became a hit.
I learnt this recipe from a cookery show (don't remember the name), very healthy and crunchy.
Have these sooji toast anytime of the day, in breakfast,  with a cup of tea or send them in your child's lunch box.

 Ingredients:

  • 4-5 brown bread slices
  • 1 cup thick curd 
  • 1 cup semolina / Sooji 
  • Finely chopped veggies (Red, green and yellow bell pepper, tomato without pulp, onion, parsley or fresh coriander leaves)
  • Salt acc.to taste
  • 1/4 tsp pepper powder
  • 1/4 tsp oregano
  • 1 tbsp butter



Method:

  • Heat a pan, slightly dry roast the semolina till the aroma arises.
  • Remove from the pan.
  • Take a bowl, put semolina, veggies, curd, salt, pepper and oregano.

  • Mix well and make thick paste. ( Add water if required)

  • Remove sides of the bread and apply butter on one side of the slice.
  • Apply the veggie mixture on the other side of the slice.
  • Now toast the slices in the non-stick pan.

  • Cook from both the sides till it become golden brown in colour.
  • Apply butter or oil in case paste sticks on the pan.
  • Remove from fire, cut into desired shape.
  • Serve hot with tomato ketchup.

Vada Pav / Indian Burger

Hi Friends,
Vada Pav a famous snack of Maharashtra, Its fried potato vada in between the slices of pav (Bun).
In Bangalore, there is a famous chain of vada pav ( Goli vada pav). It is famous for the various stuffing and variety of vada pavs are available there.
First time I tried vada pav at home and was enjoyed by everyone at home.



Ingredients:
2 boiled and mashed potatoes
1/2 tsp oil
1 onion (finely chopped)
1/2 tsp mustard seeds
1/2 tsp ginger-garlic paste
1-2 green chilies (finely chopped)
1/2 tsp garam masala
1/2 tsp coriander powder
1/4 tsp turmeric powder
1 tbsp amchoor powder
salt acc. to taste
Few fresh coriander leaves (finely chopped)

For batter:
1 cup besan
salt to taste
1/2 tsp red chilly powder
1/4 tsp ajwain (carom seeds)
1/4 cumin powder
water to make batter

Method:
  • Heat 1/2 tsp oil in a non-stick pan, add the mustard seed. Add  ginger-garlic paste  saute for few mins, add the onions. Mix well.
  • Cook till onions become golden pink in colour.
  • Add all the dry masalas. Mix nicely.
  • Add potatoes, mix and cook on low flame for few mins. 
  • Remove from fire, sprinkle coriander leaves on the potato masala.
  • Once the masalas cools down, divide it into equal portion. Make small balls and keep aside.
  • Heat enough oil for deep frying in a kadhai. In the meanwhile prepare the batter. 
  • Take a large bowl, put all the ingredients of the batter. Now add water slowly and keep mixing to avoid lump formation. Add water till you get thick batter. (Not too thick)
  • Dip the potato ball in the batter and coat it well from all the sides. 
  • Put in the hot oil, cook on medium flame till golden brown. 

  • Remove on an absorbent paper.


To make Vada Pav: Cut pav  horizontally in the centre leave a little at the corner. Apply  green chutney and tamarind chutney on the pav , place a potato vada. Serve immediately with green chilly and onion slices.

Paneer Pav Bhaji

Hi Friends,
Pav bhaji is fast food originated from Mumbai.....Its a famous street food of most of the famous cities. Very easy to make and because it contains lots of veggies in it so it is healthy too.

I make pav bhaji very often but this time I added crumbled paneer (cottage cheese) in the veggies. Guess what ??? Adding paneer in the dish makes a lot of difference, so friends do try it and see the difference........



Ingredients:

  • 3 boiled potatoes
  • 1 cup of crumbled paneer (cottage cheese)
  • 1 cup peas
  • 1 cup cauliflower (chopped)
  • 1 cup cabbage (chopped)
  • 1 cup carrot (chopped)
  • 4 big tomatoes (chopped finely)
  • 3 big onions (chopped finely)
  • 1 small capsicum (chopped finely)
  • 3 tbsp ginger-garlic paste
  • Salt to taste
  • 2 tbsp Pav Bhaji masala
  • 1/2 tsp red chilly powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • Garnish: chopped coriander
  • Mash boiled potatoes and paneer (cottage cheese ), keep it aside. 
  • Roast capsicum on gas burner with the help of fork. Once its done from all the sides. Remove the seeds and chop it in small cubes.

  • Pressure cook all the chopped veggies (cauliflower, cabbage, carrot and peas).
  • Heat oil in a kadai, add ginger-garlic paste. Add onion and saute till they become golden brown.
  • Add chopped tomatoes and capsicum, mix well and cook till oil separates.
  • Add all the dry masalas.
  • Bhuno well.
  • Put all veggies, potatoes and crumbled paneer. Keep mashing in between with the help of masher.

  • Mash well all the veggies and keep sprinkling water occasionally. Keep the bhaji to simmer on low flame for few minutes.
  • Add butter and chopped coriander. Remove from fire.

To Serve:
Heat griddle or tava. Cut Buns (Pav) into halves, apply butter on both the sides of pav. Place them on tava and cook till they are well toasted from both the sides.

Serve hot pav with bhaji along with lemon wedges and chopped onions. Enjoy.
