Dal Palak / Spinach Dal

Hi Friends...
  Having same dal again and again becomes boring ...Adding little spinach in it makes huge difference. Dal is already rich in protein and adding spinach in it not only makes it yummy but more healthy.



Ingredients:

  • 1 bunch of spinach (discard the thick stem)
  • 1/2 cup arhar/ tur dal 
  • 1/4 tsp turmeric powder (Haldi)
  • 1 large size  onion (finely chopped)
  • 2 tomatoes  (finely chopped)
  • 1 tbsp ginger-garlic paste
  • 1/4 tsp cumin seeds
  • 1 green chilly  (finely chopped)
  • 1/2 tsp garam masala
  • 1/2 tsp coriander powder
  • 1/4 chilly powder
  • Salt acc.to taste
Tadka:
  • 1 tbsp oil
  • 1/4 tsp mustard seeds
  • 1-2 dry red chilly




Method:

  • Wash dal and spinach nicely under running water. Drain excess water from spinach and keep aside for 30 mins.Roughly chop the spinach.
  • In the meanwhile, boil dal in pressure cooker with little salt and turmeric powder. After first whistle keep it on low flame for 10-12 mins.
  • Heat oil in a pan, add cumin seeds, chopped onion and ginger-garlic paste. Saute till golden brown in colour.

  • Add tomatoes, mix well and cook till oil separates. 

  • Add chopped spinach and dry masalas, mix well. Cook on low flame till spinach is cooked properly.

  • Add boiled dal.
  • Cook on low flame for 5-7 mins.
  • Remove from fire.
  • Before serving, Heat oil in tadka pan. Add mustard seeds and red chilies.
  • Immediately pour over the dal.
  • Served hot with naans and chapati.

Kadai Mushroom

Hi All....
Kadai Mushroom is one of the famous dish from Punjabi Cuisine....Cooked in whole spices with the flavour of bell peppers.

It should be served along with Tandoori Roti or Lachcha Paratha. Kadai Paneer or Kadai Mushrooms are the famous dishes to be ordered in the restaurants. Now that yummy recipe you can try easily at home.


 Ingredients:

  • 1 pack of mushroom (cut into 2 sliced)
  • 1 small red bell pepper (cut into cubes)
  • 1 small yellow bell pepper (cut into cubes)
  • 1 small green bell pepper (cut into cubes)
  • 1 large onion (paste)
  • 2 medium size tomatoes (pureed)
  • 1/2 tbsp ginger-garlic paste
  • 1-2 cloves 
  • 1" stick of cinnamon
  • 1/2 tbsp coriander powder
  • 1/2 tbsp garam masala
  • 1/4 tbsp red chilly powder
  • 1/4 tsp turmeric powder
  • Salt acc.to taste
  • oil

Method:
  • Heat oil in kadai, add whole spices (cinnamon and cloves).
  • Add onion paste and ginger-garlic paste. Saute till onions turn golden brown.

  • Add tomatoes, mix well. Cook till oil separates.
  • Add all the dry masalas. Cook for 2-3 mins.

  • Now add sliced mushrooms. Toss gently. Cook on low flame.

  • Mushrooms will leave its own water. Cook till water evaporates. 
  • Add bell peppers and mix nicely.

  • Cook for another 5-7 mins.
  • Remove from fire, Garnish and serve hot with rotis.

Ras Malai (From Rasgulla)

Hi Friends,
Rasmalai one of my favorite dessert, just love it. Its a dessert originated from Pakistan, to be served chilled after the meal....

It is made up of cottage cheese (paneer) flatten balls dipped into creamy milk (flavored with cardamom powder). I had one MTR ragullas tin, so tried in a different way.

I learnt this recipe from Jay (Tasty appetite), She is an amazing blogger. Tried most of her recipes, I think she should award me for this LOL..... It became a huge hit at my place. Now its your turn to try it...

 Ingredients:

  • 10 Rasgullas
  • 3/4 cup sugar ( I used sugar syrup from the tin)
  • 3 cups milk
  • 1/2 tsp cardamom powder
  • 2-3 pinches of saffron in 1/4 cup of warm milk
  • Chopped almonds or pistachio for garnishing





Method:

  • Take the ready-made rasgullas, squeeze the excess amount of sugar syrup and keep them aside.

  • Boil milk in a heavy bottomed pan.

  • Reduce the heat and let it cook till the quantity reduces to half.
  • Add sugar syrup, mix well. Keep on low flame for 10 mins.
  • Add cardamom powder and saffron mixture.

  • Mix nicely. Let it simmer on low flame for another 5 mins.

  • Now add pressed rasgullas, keep it on low flame for few mins.

  • Gently handle the rasmalai....They will be very soft.
  • Remove from fire, once they cool down.
  • Transfer them into serving dish.
  • Garnish with chopped nuts (pistachio and almonds)

  • Serve chilled.
