Vada with Sambhar

Hi Friends ....
Ready with another post... Earlier I mentioned about dosa with sambhar this time its Vada with Sambhar...


Ingredients:
2 cups urad dal
2-3 green chillies
1 spring curry leaves
1/2 tbsp black pepper corns
Salt to taste
Oil for frying


Method:

  1. Wash and soak the dal for minimum 3-4 hrs.
  2. Grind dal without adding any water.
  3. Now mix green chilies, curry leaves, peppercorns and salt in dal batter.
  4. Heat oil in a kadai.
  5. Dip your hands in water and take a small size of batter.
  6. Flatten with your palms to form a round shape.
  7. Make a hole in the centre with finger.
  8. Drop the flattened batter into the oil and deep fry till they become golden brown in colour.
  9. Drain the excess oil on an absorbent paper .
  10. Serve hot with coconut chutney and sambar.

Sambhar recipe

Sambhar recipe for you all ....enjoy sambhar with vada, idly or dosa ...

Ingredients:
1 cup toor dal
1/4 tsp turmeric

1/4 tsp red chilly powder
1/2 tsp garam masala
1/2 tsp coriander powder1 tbsp oil
1/2 tsp mustard seeds
2 tbsp tamarind pulp
1/8 tsp asafoetida
2 medium onions (finely chopped)
1 medium tomato (finely chopped)

Veggies ( eggplant, carrot, beans, drumsticks)
1 tbsp sambhar powderSalt to taste
For Tadka :-
3-4 dry red chilies
Few fresh or dried curry leaves

Method:

  1. Boil the yellow dal in a pressure cooker, mash it and keep aside. 
  2. Cook the veggies with a pinch of turmeric powder in some water. Remove from fire when soft. 
  3. Heat 1 tsp of oil in a pan and saute the onions till they turn golden brown. 
  4. Add tomato, sambhar masala and the dry ingredients. Stir well. Cook till oil separates.
  5. Add the veggies, toor dal and the tamarind pulp. Mix well. Add two cups of water and let it cook for 15-20 min on medium heat. 
  6. In another pan heat 2 tbsp oil and add curry leaves and dry red chillies. Let it simmer till they begin to crackle. 
  7. Pour it on the sambhar and serve hot with idly, vada or dosa

Masala Dosa with Sambhar

Hi  Friends ...
   Weekend started and everyone loves to spend time with family and having good food at home...
So friends what about having a heavy brunch on Saturday mornings with your family ???
Enjoy masala dosa with sambhar this weekend :-)



Ingredients:
  • 1 cup plain rice.
  • 1 cup parboiled rice.
  • 1/4 cup white urad dal.
  • 1/2 tsp. methi (fenugreek) seeds
  • Oil as preferred
  • Water for grinding

For masala:

  • 2 large onions (finely chopped)
  • 2 large potatoes boiled and peeled (roughly mashed)
  • 2-3 green chilies (finely chopped)
  • tbsp chopped coriander
  • 8-10 cashews halved
  • 1/2 tsp urad dal, 
  • 1/2 tsp cumin seeds 
  • 1/2 tsp mustard seeds 
  • Oil 
  • 1/4 tsp turmeric
  • Salt to taste


Method:

  1. Wash the rice and dal together. Add plenty of water and methi seeds. Allow to soak for 7-8 hours or overnight. Grind to a paste.
  2. Don't turn it into fine paste rawa-like grains should be there. 
  3. Keep aside in a warm place for 8-10 hours.
  4. The consistency of the batter should be enough to thickly coat on a spoon when dipped.
  5. Heat the iron griddle or non-stick tawa well. Spread the mix on pan in circular motion to make thin dosa. Pour a tsp.of oil over it.
  6. Place a tbsp. Masala in the centre. Fold into triangle (or any other shape). Remove with from tawa when crisp. Serve hot with chutney or sambar.


For Masala

  • Heat oil, add cashews and brown lightly.
  • Add dal, cumin seeds,mustard seeds, once they splutter. Add chillies and onions. Fry till tender.
  • Add turmeric, salt, potatoes, coriander. Mix well.
