Kadai Mushroom

Hi All....
Kadai Mushroom is one of the famous dish from Punjabi Cuisine....Cooked in whole spices with the flavour of bell peppers.

It should be served along with Tandoori Roti or Lachcha Paratha. Kadai Paneer or Kadai Mushrooms are the famous dishes to be ordered in the restaurants. Now that yummy recipe you can try easily at home.


 Ingredients:

  • 1 pack of mushroom (cut into 2 sliced)
  • 1 small red bell pepper (cut into cubes)
  • 1 small yellow bell pepper (cut into cubes)
  • 1 small green bell pepper (cut into cubes)
  • 1 large onion (paste)
  • 2 medium size tomatoes (pureed)
  • 1/2 tbsp ginger-garlic paste
  • 1-2 cloves 
  • 1" stick of cinnamon
  • 1/2 tbsp coriander powder
  • 1/2 tbsp garam masala
  • 1/4 tbsp red chilly powder
  • 1/4 tsp turmeric powder
  • Salt acc.to taste
  • oil

Method:
  • Heat oil in kadai, add whole spices (cinnamon and cloves).
  • Add onion paste and ginger-garlic paste. Saute till onions turn golden brown.

  • Add tomatoes, mix well. Cook till oil separates.
  • Add all the dry masalas. Cook for 2-3 mins.

  • Now add sliced mushrooms. Toss gently. Cook on low flame.

  • Mushrooms will leave its own water. Cook till water evaporates. 
  • Add bell peppers and mix nicely.

  • Cook for another 5-7 mins.
  • Remove from fire, Garnish and serve hot with rotis.

Dahi Mushroom

Hello Friends ...
Had a lovely weekend with my family and friends ....So back to my work with a much awaited post of DAHI MUSHROOM. I made this recipe and friends believe me this recipe rocks :-)


Ingredients:

  • 1 pack of mushroom
  • 1/4 tsp ajwain
  • 2 tbsp oil
  • 1 onion finely chopped
  • 1/2 tbsp ginger/garlic paste
  • 1-2 green chilies (finely chopped)
  • 1 cup of beaten curd
  • 1/2 tsp coriander powder
  • 1/4 tsp garam masala
  • 1/2 tsp cumin powder
  • Salt acc.to taste
  • Fresh coriander leaves (finely chopped) for garnishing

Method:
Cut each mushroom in 4 pieces (including stem) if the size of mushroom is big then make 6 pieces.
Heat oil in kadai, add ajwain. Saute for 7-8 secs.
Add ginger-garlic paste, saute for few seconds.
Add onions and green chilly, saute till onions become golden brown in colour.
Add chopped mushroom, cook covered on low flame till mushrooms leave water.
Remove the lid and cook on high flame so that the water dries up.
Add all the dry masalas. Mix nicely.
Reduce the heat and add curd in the mushrooms.
Cook till curd coats the mushrooms nicely.
Remove from fire.
Sprinkle fresh coriander on the top.
Serve hot.

Mushroom Tikka

This one is for all my vegetarian friends....


Ingredients:
1 pack of Mushroom
1/2 cup thick curd
1 tbsp ginger/garlic paste
1/2 tsp garam masala
1/2 tsp coriander powder
1/2 tsp red chilly powder or acc.to taste
A pinch of red colour (optional)
1/2 lemon juice
1 tbsp besan (roasted channa powder)
1 tbsp cream (optional)
1/2 tsp kasuri methi powder
Salt acc.to taste
1 capsicum
1 tomato
1 onion


Method:
  • Wash and remove mushroom stem,pat dry.
  • Cut large cubes of onion, capsicum and tomato.
  • Mix all the ingredients of marination in a bowl.
  • Dip the mushrooms,capsicum,tomato and onion in the marination and keep it for 2-3 hrs in the refrigerator.
  • Take wooden skewers and skew marinated mushrooms and veggies alternatively one by one.


Note: Keep skewers in water for 1 hr before assembling the veggies and mushrooms. This will prevent skewers to get burnt.
  • Roast in tandoor or grill in microwave at 230c for 10-15 mins.
  • This time I did shallow frying in non-stick pan.

  • Basting in between with butter and oil. (1:1 ratio)
Serve hot with green chutney and onion laccha rings.

Mushroom Pizza Pocket OR Calzone


Hello Friends...
     Ready with a new post Mushroom Pizza pockets or Cal zone ....Very easy and heavy snacks for Birthday parties or Kitty parties.....My son Hardik loved it ......Enjoy

Ingredients:
For Dough:  
  • 1(1/2) cup maida
  • 1 tsp. dry yeast
  • 1 tsp. salt
  • 1 tsp. sugar
  • Oil to knead
For filling:
  • 1 finely chopped onion
  • 2 finely chopped tomatoes
  • 3-4 flakes of garlic (crushed)
  • 1/2 cup finely chopped mushrooms
  • 1 finely chopped yellow bell pepper
  • 1/4 cup boiled corn kernel
  • 1tsp oregano
  • salt according to taste
  • Chilly flakes (optional)
  • 1/4 tsp pepper powder
  • 1 cup grated mozzarella cheese (I used cheese slice)
  • 2 tbsp. olive oil or vegetable oil 
Method:
  • To prepare a dough, dissolve dry yeast in 1/4 cup of hot water.Dissolve it completely and keep it aside.
  • Mix all the ingredients of dough except oil.Keep it aside for 20-25 mins.(till it becomes double the volume)
  • Grease your palm with oil again knead the dough nicely.Keep it aside for 20-30 mins.
  • Prepare filling,heat oil in a pan,onion and crushed garlic.Saute till onions become golden brown in colour.
  • Add tomatoes and bhuno nicely till oil separates.
  • Add all the dry masala and mix well.
  • Add yellow pepper,corn kernels and mushrooms.Mix well. 


  • Cover and cook for 5-6 mins. Cook till the water dries up.Keep the mixture aside for cooling. Divide the mixture into 8 portions.
  • Now roll the dough into chappatis 6"inch in diameter.


  • Put one portion of the filling in the center of the chappati.
  • Fold each circle to form a semicircle.
  • Seal the edge using a little water and press the edge with the help of a fork.


  • Bake them in pre-heated oven for 40-45 mins or until they are evenly browned.(Keep checking in between)
  • Remove from the baking tray.Cut into half with the help of pizza cutter.
  • Serve hot with tomato ketchup......

Note: You can deep fry them instead of baking ...but according to me baking is a good option .
Try with different fillings too like chicken mince, crumbled paneer, crumbled boiled egg etc.....
