Baked Ratatouille in White Sauce

Hi Friends,
        French cuisine is famous world wide....Creamy and full of cheese, I am a cheese lover so keep searching new recipes that contains cheese.

As the event going in my blog organised by Nayna from Simply Food, so tried this new recipe at home....If your cheese lover then do try this recipe :)




Ingredients:

  • 1/2 cup all purpose flour (maida)
  • 1/2 cup cornflour
  • 1/2 cup milk
  • 1/2 cup water
  • a pinch of salt
For Stuffing:
  • 1 cup peeled and chopped brinjal (baingan)
  • 1 onion (finely chopped)
  • 1 tomato (finely chopped)
  • 1/2 cup boiled green peas 
  • 1/2 cup mushroom (finely chopped)
  • 1 green chilly (finely chopped)
  • 1 tbsp chopped coriander
  • 2 tbsp oil
  • salt to taste
  • 2 cups White Sauce 
  • 5 tbsp grated processed cheese




Method:
For the pancakes

  • Mix the flour, cornflour, milk, water and salt. Whisk it nicely, avoid lump formation.

  • Spread a ladle of the batter onto a non-stick frying pan and cook on both sides with a little olive oil. Repeat for remaining batter.
                                

For the ratatouille stuffing

  • Heat the oil, add green chilly and onions, saute till onion becomes transparent. 
  • Add the tomato saute again for a few mins.
  • Add the brinjal pieces, mushrooms and peas. Mix well, cover and  cook until soft.
  • Add the salt and fresh coriander.

How to assemble:

  • Put some stuffing in the centre of each pancake and roll up.
                              
                     Shape of the pancake looks funny, but don't worry........

  • Arrange in a baking dish. Pour the  white sauce on top and sprinkle with the grated cheese.




  • Bake in a hot oven at 220 degree C  for 20 minutes or until cheese melts and turns golden brown.
  • Serve hot.
