Ingredients:
- 1/2 cup all purpose flour (maida)
- 1/2 cup cornflour
- 1/2 cup milk
- 1/2 cup water
- a pinch of salt
- 1 cup peeled and chopped brinjal (baingan)
- 1 onion (finely chopped)
- 1 tomato (finely chopped)
- 1/2 cup boiled green peas
- 1/2 cup mushroom (finely chopped)
- 1 green chilly (finely chopped)
- 1 tbsp chopped coriander
- 2 tbsp oil
- salt to taste
- 2 cups White Sauce
- 5 tbsp grated processed cheese
Method:

How to assemble:
For the pancakes
- Mix the flour, cornflour, milk, water and salt. Whisk it nicely, avoid lump formation.
- Spread a ladle of the batter onto a non-stick frying pan and cook on both sides with a little olive oil. Repeat for remaining batter.
For the ratatouille stuffing
- Heat the oil, add green chilly and onions, saute till onion becomes transparent.
- Add the tomato saute again for a few mins.
- Add the brinjal pieces, mushrooms and peas. Mix well, cover and cook until soft.
- Add the salt and fresh coriander.
How to assemble:
- Put some stuffing in the centre of each pancake and roll up.
Shape of the pancake looks funny, but don't worry........
- Arrange in a baking dish. Pour the white sauce on top and sprinkle with the grated cheese.
- Bake in a hot oven at 220 degree C for 20 minutes or until cheese melts and turns golden brown.
- Serve hot.
