Ingredients:
- 2 tomatoes (De-seed and chopped)
- 1 English cucumber (Chopped with peel)
- 1 green bell pepper (De-seed and chopped)
- 1 big onion (Sliced)
- 3-4 tbsp of chopped parsley
- 1/2 cup Feta cheese (Chopped) Optional
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
- Salt to taste
- 1/2 tsp pepper powder
- Garnish: Chopped parsley
Method:
- Mix all the chopped vegetables and feta cheese in a bowl.
- Add chopped parsley and toss well. Keep the salad in the fridge.
- Before serving squeeze the lemon, add olive oil, pepper powder and salt . Whisk nicely.
- Pour on the salad. Toss gently.
- Garnish with parsley and serve chilled.
