Vegetable Dum Biryani

Hi Friends, 
Back with another SNC challenge 6........South-North Challenge has completed 6 months, started from OCTOBER and till now. 
6 Challenges posted from 12 different blogs and We all learnt 12 different recipes from All over the India....

March month challenge for Northern Team  was posted by Swasthi from Indian Healthy Recipe
And for Southern team it was posted by Kirti from Flavours From My Kitchen.



Ingredients:
  • 2 cups Basmati  rice           
  • 2 Onions (Grind)
  • 2 Tomato (Paste)
  • Chopped Veggies (Carrot, beans, cauliflower, peas)  
  • Green chilly             
  • 1 tbsp Ginger garlic paste 
  • 1" Cinnamon                   
  • 3-4 Cloves   
  • 1 bay leaf 
  • 1 anise seed              
  • 1/4 tsp Red chilly powder
  • 1 tsp coriander powder        
  • 1 tsp garam masala    
  • 2 tsp biryani masala  
  • 1/2 tsp turmeric powder   
  • 1/2 cup beaten yogurt (curd)          
  • Handful  mint leaves and coriander leaves
  • Salt to taste
  • 3-4 tbsp oil
  • 2-3 tbsp ghee
  • Garnish: Cashews and Raisins 




Method:
  • Wash the  rice and soak them in water for 30 mins.    Cook the rice in 4 cups of water.
  • Cook till half done, drain the excess water and spread them on the large tray.
                            

  • Heat oil in a non-stick pan, add cinnamon, cloves, bay leaf, anise. Saute for 4-5 secs.

  • Add onions and ginger-garlic paste, saute till it becomes golden brown.

  • Add tomato puree and green chilly. Saute till oil separates.

  • Add yogurt, mix well and cook again till oil separates.
  • Add salt, red chilly powder, garam masala, coriander powder and briyani masala, haldi and mix well.
  • Add all the vegetables and mix lightly.

  • Cook for 2-3 mins then remove from fire.
  • Heat ghee in a Non-Stick Kadhai.
  • Add rice, now put veggie layer.

  • Sprinkle  mint leaves and coriander leaves.
  • Again one layer of rice followed by veggies and mint coriander leaves.

  • Cover it with lid to give DUM to the biryani.
  • Place the Non-stick kadhai on hot tava and give DUM for 7-8 mins on low flame.
  • Remove from tava, dont open the lid immediately.
  • Open the lid after 7-8 mins and garnish with nuts (cashew and raisin)
  • Serve hot with mix raita......

Egg Fried Rice


Hi All.......
Chinese food is one of the favourite cuisines now a days ........Fried rice, noodles, chili chicken, chili paneer and momos have become kids favourite..
Made egg fried rice last night with chili chicken. Chili chicken recipe I posted earlier so today posting recipe of EGG FRIED RICE...... 

 Ingredients:

  • 2 cups  rice
  • 4 cups water
  • 2 Eggs
  • 2 cups of finely chopped veggies (Carrot, beans, capsicum, cabbage, spring onion, onion)
  • 1/2 cup chopped Spring onions
  • 1 tbsp finely chopped Garlic
  • 1 tbsp finely chopped Ginger
  • 1/4 tbsp pepper powder
  • Salt acc.to taste
  • 2 tbsp oil
  • 1 tbsp soya sauce
  • 1 tbsp vinegar
  • 1 tbsp chili sauce
  • 2 tbsp tomato ketchup



Method:


  • Cook rice in 4 cups of water in a heavy bottomed pan. Once half-cooked remove from fire.
  • Drain and  spread them on a large plate or a tray.

                          

      • Add a little oil in a pan, beat the eggs, pour them into the  pan. When egg has set a little from one side, stir and scramble it. Remove from fire. Keep them aside.


      •  Heat oil in a non-stick kadhai, add chopped ginger-garlic. Saute for 5 seconds.
      •  Add onions and cook till they become golden pink in colour. Add chopped carrot, beans and fry them for 3-4 mins.
      • Add Cabbage, Spring onions and capsicum and saute for 3-4 mins on high flame.


        

      • Don't overcook the veggies, they should be crisp.
      • Now add vinegar, soya sauce, tomato ketchup and chili sauce. Mix well.
      • Slowly add cooked rice, black pepper powder and salt, mix well with light hands without breaking the rice.
      • Sprinkle scrambled egg at the top. Remove from fire.



      • Serve hot with your favorite gravy...........

      Chicken Lasagna

      Hi Friends,
      Having same chapati and veggies everyday is so boring ........Lets try something new at home :) 
      Healthy and yummy .. 

       Ingredients:

      • 12 lasagna sheets
      • 2 cups of mozzarella cheese
      • 2 cups of cooked minced chicken 

      For White Sauce :

      • 2 tsp butter
      • 1 minced garlic
      • 1 medium size onion (finely chopped)
      • 2 tbsp all purpose flour (maida)
      • 1 tbsp cornflour
      • 2 cups of milk
      • 1/2 cup of cream cheese
      • 1/2 cup of Parmesan cheese
      • 1/2 cup boiled corn or any other veggie of your choice
      • Salt acc.to taste
      • 1/4 tsp pepper powder
      • 1/2 tsp oregano 




      Method:

      1. Pour 6-7 cups of water in a heavy bottomed pan, add little salt and oil.
      2. Bring water to boil, add lasagna sheets. Cook for 8-10 mins.
      3. Discard water, spread the sheets on a tray. Keep them aside.

      In the mean while cook minced chicken : Its according to your wish how you want to make it.


      My method is :  
      1. Take olive oil in a kadhai, add 1 tsp of chopped garlic and onion. Saute till onions become golden brown in colour. 
      2. Now add minced chicken and salt, cook covered on low flame till water evaporates. That's it

      Make White Sauce:
      • Make white sauce, Heat butter in a kadai.
      • Add minced garlic and onion.Saute till onion becomes golden pink in colour.
      • Add maida and cornflour, saute till maida turns light brown in colour.

      • Now slowly add milk, keep stirring to avoid lumps formation.
      • Add oregano, salt and pepper.
      • Keep stirring till mixture becomes thick. Now add boiled corn, creamy cheese and Parmesan cheese.
      • Cook till both the cheese melt in the mixture. Don't forget to stir in between.
      • Now your white sauce is ready.

      Assemble:
      • Take a baking dish, grease it.

      • Place 3 lasagna sheets on it. Sprinkle cooked chicken.


      • Cover it with white sauce.

      • Now take 4 lasagna sheets, put little cooked chicken on the sheets, roll them and place them in baking dish.


      • Sprinkle mozzarella cheese and remaining cooked chicken.

      • Cover it with remaining sheets of lasagna.

      • Again make a layer of white sauce.

      • Finally sprinkle lots of mozzarella cheese on the top.

      • Bake it on 180 C for 30-40 mins till cheese melts and turns golden brown in colour.
      • Remove from microwave, serve hot.
      • Enjoy ..............
