Vada Pav a famous snack of Maharashtra, Its fried potato vada in between the slices of pav (Bun).
In Bangalore, there is a famous chain of vada pav ( Goli vada pav). It is famous for the various stuffing and variety of vada pavs are available there.
First time I tried vada pav at home and was enjoyed by everyone at home.
Ingredients:
2 boiled and mashed potatoes
1/2 tsp oil
1 onion (finely chopped)
1/2 tsp mustard seeds
1/2 tsp ginger-garlic paste
1-2 green chilies (finely chopped)
1/2 tsp garam masala
1/2 tsp coriander powder
1/4 tsp turmeric powder
1 tbsp amchoor powder
salt acc. to taste
Few fresh coriander leaves (finely chopped)
For batter:
1 cup besan
salt to taste
1/2 tsp red chilly powder
1/4 tsp ajwain (carom seeds)
1/4 cumin powder
water to make batter
Method:
- Heat 1/2 tsp oil in a non-stick pan, add the mustard seed. Add ginger-garlic paste saute for few mins, add the onions. Mix well.
- Cook till onions become golden pink in colour.
- Add all the dry masalas. Mix nicely.
- Add potatoes, mix and cook on low flame for few mins.
- Remove from fire, sprinkle coriander leaves on the potato masala.
- Once the masalas cools down, divide it into equal portion. Make small balls and keep aside.
- Heat enough oil for deep frying in a kadhai. In the meanwhile prepare the batter.
- Take a large bowl, put all the ingredients of the batter. Now add water slowly and keep mixing to avoid lump formation. Add water till you get thick batter. (Not too thick)
- Dip the potato ball in the batter and coat it well from all the sides.
- Put in the hot oil, cook on medium flame till golden brown.
- Remove on an absorbent paper.
To make Vada Pav: Cut pav horizontally in the centre leave a little at the corner. Apply green chutney and tamarind chutney on the pav , place a potato vada. Serve immediately with green chilly and onion slices.
